Chicken Salad Spinach Salad

Hello Paleo Eaters! Let’s cut to it…This has been another tense weekend. Second week of the new regime and the Second Week of protests. Whew it is going to be a long, long 4 years. So while this mess was playing in the background, I decided to make a Chicken Salad Spinach Salad. I need to keep it light, just in case I have to run…just sayin’.

I believe I have a Chipotle Chicken Salad that is up currently up on the this sight. What  can I say? I love Chicken Salads. I had forgotten that I had made one not too long ago…Actually it has been a long while. The Chipotle Chicken Salad was a recipe from last year on the old Paleo Food Critic site. I loved it so much that I reposted it right away. So with that said, there is not much that is going to be different from that recipe to this one.

What you need for this recipe:

  1. 1 rotisserie chicken, broken down and diced
  2. 2 celery stalks, diced
  3. 1/2 cucumber, diced
  4. 1/2 red onion, diced
  5. 1 cup Paleo Mayo
  6. 1/4 cup mustard
  7. salt and pepper
  8. Spinach or your lettuce of choice

If you buy the whole chicken from Publix or Costco, break down the chicken and take off all of the meat. Chop the meat into bits. When all was done I used maybe about three quarters of the chicken. I am going to save the rest for something else. Place the chicken in a medium bowl.

Dice the celery stalks, red onion, and cucumber. Place in the bowl.

Add in the Paleo Mayo and mustard. Depending on how creamy you would like the salad is how much you are going to add. Also, if you don’t like mustard, leave it out!

Add a couple shakes of salt and pepper. Mix well.

Add a couple of scoops on top of Spinach on top of your lettuce of choice. And voila! There is your very own tasty Chicken Salad Spinach Salad!

If you don’t like a “salad” then you can always throw it on some Multigrain bread, if you are into that sort of thing.
