Paleo Chipotle Chicken Salad

Oh hello friends! Welcome to the site or even better Welcome Back to the site. Happy you are here folks! Anyways, it was warm this past weekend and I was looking for something that was a bit light and refreshing. I didn’t want a huge meat thing and so I came across the recipe, Paleo Chipotle Chicken Salad, in one of my fav sites, PaleOMG.com. It was quick, simple, light and refreshing.

I was able to find some great short cuts for this one recipe as well. One of them is Costco. I love Costco! I shop there a ton for my mainstream ingredients. Since I love to cook bulk I buy bulk! They have this thing now where you can buy the rotisserie chicken already cut up and vacuum sealed for you. I break that up in like 4 separate batches and freeze some so I always have some handy. You can throw it in anything and its ready to go. No worrying about having to break down a chicken. However, if you don’t have that option that up can use cooked chicken breasts or break down one of those rotisserie chickens you can find anywhere. The chicken is just going to be diced up so it doesn’t have to be pretty.

This recipe uses simple ingredients, most things you may have on hand already.

  1. 1 pound chicken breast- cooked and diced
  2. 2 stalk of celery-chopped in small bits
  3. 1/4 white onion-chopped
  4. 1/2 cup Paleo chipotle mayo…either buy the pre-made Paleo mayo or make your own. (I am a fan of the Paleo Mayo from Mark Sisson.)
  5. 1 teaspoon Chipotle seasoning
  6. Lettuce of choice…baby spinach or chopped romaine

Chop up the celery, chicken and onion and throw it into a mixing bowl and blend together.

Once that is all put together, let’s make the mayo the cheater way! Take the 1/2 cup of Paleo Mayo and the 1 teaspoon of chipotle seasoning and mix well in a small bowl.

Once mixed well then add it to the chicken mixture.

Mix well! And that is it!!! Add it on top of your favorite greens! I added chives onto the top  of the salad for a little extra…but you totally don’t have to…..

This Chipotle Chicken Salad is a quick and fresh chicken salad that won’t leave you wore down! I would definitely make more. This recipe doesn’t serve but a couple of folks. So if you are looking for more servings then you are going to want to double the recipe.

Instructions
  1. Chop up the celery, chicken and onion and throw it into a mixing bowl and blend together.

  3. Once mixed well then add it to the chicken mixture.
  4. Add on top of your choice of greens. Add on some chives if you like.
