The Best Paleo Egg Salad

Well hello fellow foodies! How are you all hanging in there? Things are moving quickly in the world. I am just trying to hang on for dear life. Hence why The Best Paleo Egg Salad recipe is coming up a little late. I made this last weekend and probably promised that it would have ben up like um…..last Wednesday. Yeah well…things got a little crazy at work and things just didn’t work out as planned! Sorry about that! However, the wait is well worth it!

So at the office there is a cafeteria in the building, and there is this gal that makes one of the Best Egg Salad’s out there. It is not your typical egg salad that goes on bread or lettuce. This is a like a delicious side dish or just plain meal for everyday. Since I love it so much I thought I would try and replicate the recipe. So of course this is not the same one that she makes (and I really wish I knew her name or where she got this recipe) but I decided that I was going to go for it and make my own version.

Here is what you need for this simple but delicious recipe:

  1. Hard Boiled Eggs
  2. Green peppers
  3. Red onions
  4. Broccoli
  5. Cucumber
  6. Celery
  7. Feta (optional)
  8. Paleo Mayo
  9. Mustard
  10. Salt and Peper

Hard boil about 6 eggs. I have a fancy little cooker thing that cooks them in like 5 minutes. It’s amazing.

Cut and dice the green peppers, red onions, cucumber, celery and broccoli. Place into a bowl.

When the eggs are cooked and cooled, peel the eggs and cut into quarters only. Not little pieces! Place into the bowl.

Add in a cup of Paleo Mayo and mustard. Mix well.

Add in Feta cheese is you are feeling so compelled. Also, throw in a couple shakes of salt and pepper.

Mix well. It is best served chilled.

That’s it folks! It is really that simple! You have a delicious meal or side dish that you can eat any time. Even as a snack! This is the The Best Paleo Egg Salad ever! You will really love it.

Instructions
