Well hello everyone! Welcome to another recipe Wednesday! This Paleo Buttery Cod is a recipe that I had made a while back. It is a good recipe if you love some butter. I found this recipe on heathyrecipesblogs.com. I wanted to see how healthy it actually really is and if it tastes good. So, I put it to the test!
Here’s what you need:
- 4 pieces of good sized cod
- 4 tablespoons unsalted butter, melted (I used ghee)
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- 1 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
- olive oil
Preheat the oven to 425 degrees. Mix in a small bowl the melted butter or ghee, lemon juice, minced garlic, red pepper flakes, and kosher salt. For the cod you can either bake them frozen or thawed out. If your going to bake them frozen, then you are going to need to add on a bout 5 minutes to the baking time. Get out your baking dish and drizzle some olive oil on the bottom to coat. Place the cod in the dish.
Pour the butter mixture on top of each of the cod.
Bake in the oven for about 10-15 minutes if thawed and about 20-25 if frozen.
Take out of the oven and let set for a couple minutes. Sprinkle the paprika on top. Serve warm.
This recipe turned out OK. It is super buttery, but if you dig that kind of thing then you will be golden. Tons of butter is kinda not my thing (unless it’s lobster!) I would also not advise on making tons of this Buttery Cod. This is definitely not a batchable item. I would stick with eating it that day and maybe a portion for the next and call it a wrap. The good thing about this recipe is that it is really easy to make. You don’t have to do much really for it. This really wasn’t a favorite recipe of mine. sorry to say but I just needed to throw it out there. But as you know not all recipes are hits. I am just being honest.
