Good afternoon Paleo Lovers! I love love love love when I can make two recipes with a bunch of the same ingredients. This recipe that I am bringing to you is the tasty and super simple Paleo Overnight Salad. The other recipe that I made at the same time using the same ingredients was the Paleo BLT Frittata (recipe to come). So I had whatever was extra from the Frittata and I also had a couple hard boiled eggs in the fridge. So essentially this is all the same recipe but just a bit different.
What you need for this Paleo Overnight Salad recipe:
4-5 pieces of bacon, cooked and chopped
4-5 cups of baby organic spinach
3-4 chopped hard boiled eggs
1 cup sliced mushrooms
1 medium sliced tomato
Get out a large bowl that preferably has a lid. This is a layered salad which makes it even more easy. First, add in the baby spinach.
Next put on top the chopped eggs and the sliced mushrooms. Next lay the sliced tomatoes on top and finally the bacon.
Once you have all of the layers down that you would like (add in any yummy veggies you like such as onions or beets).
I make a dijonaisse for the top or dressing. For this mix up up about 1/2 cup Paleo Mayo and 1/4 dijon mustard. If you are making a bigger salad then use more. Lay the dressing on top of the salad mixture like a blanket.
I used a glass bowl temporarily to show you the layers on the side. This was a huge bowl and it could have been smaller. I didn’t have as many left over ingredients as I would have liked!
You want to let this salad sit overnight which is why I recommend a bowl with a lid.
The next day I plated me some of this delicious and nutritious salad and brought some to work for lunch the next few days!
This is quick and simple and it was great to make this along with the frittata (look out for that upcoming recipe). It made enough for about 3 good salads worth for the week. This you can make a ton of it, if you have a big bowl. You can layer anything on there as well. I have added chicken sausage or roasted chicken as well as a layer. You can also keep this vegetarian and lay off the bacon.
Obviously you can’t freeze this for later but it does hold up in the fridge for quite a while. At least until it is gone! You can eat it alone or eat it as a side to any other main dish. The dijonaisse is a perfect addition to the salad. It gives it a good kick.
