Happy Saturday Friends! I am moving right along in posting up these fantastic recipes! I believe that this Paleo Shrimp and Sausage over Cauliflower Rice will be a huge hit for all people making it.
I came a cross this type of recipe in RealSimple.com. It is not originally a Paleo recipe, I just made it that way!!!! Whhhaattttt…? Yep…Most recipes you can make a healthy version of. You just have to use a little imagination and what veggies you may have lingering around. This was one of those recipes…I changed some ingredients and made it my own!
Here is what you need for my version of the Paleo Shrimp and Sausage over Cauliflower Rice! Also note this….Back a few couple weeks ago (is that a real sentence?) I had made a big batch of Cauliflower Rice and I had froze about half of it. So this was so easy to just take that out of the freezer and implement it with this recipe. You can also find some that is already pre-made. I believe that they have it Whole Foods or Trader Joe’s. It will save you a bunch of time if you do not have to make it from scratch. I will post a recipe on how to make the Cauliflower Rice in a subsequent post.
Again here is what you need for this recipe:
- 1 pound of sweet sausage (bought in bulk at Costco!)
- 1/2 diced yellow onion
- 1/2 cup mushrooms, chopped
- 28 oz. can of fire roasted tomatoes
- 1 cup of peas
- 1 pound of shrimp, peeled and cleaned
- Cauliflower Rice (pre-made or make your own)
- olive oil
- salt and pepper
Get out a large sauté pan. Drizzle some olive oil into the pan. Drop in the sweet sausage (take the casings off if they are in them)! Break up the sausage. In the meantime, chop up your onions and mushrooms.
Start your Rice….either the pre-made cauliflower rice or regular rice.
Add the onions into the sausage about half way of cooking the sausage. You want the onions a bit on the softer side. Both the sausage and onions should be done around the same time.
Next, toss in your chopped mushrooms and mix. Add in the fire roasted tomatoes. Stir well.
Next add in the peas!! There is some controversy about peas…are they Paleo or not? Aren’t they a legume? Look, it’s a cup of peas…you won’t die and if you really must hate them, then just leave them out! I am not hatin’. Stir the peas into the mix. However, if you don’t want the peas, leave them out.
Moving on, we are going to add in the peeled and cleaned shrimp! Yum! Cook until the shrimp are cooked through, which would be on the pink side! Shake some salt and pepper on top. Stir occasionally to make sure that all of the shrimp get good and pink. It’s going to take about 5-10 minutes or so!
This Paleo Sausage and Shrimp makes a ton!!! I love love love that….6 hefty servings. Serve the mix over the Cauliflower Rice and it makes for hearty filling meals!
I highly recommend Paleo Shrimp and Sausage over Cauliflower Rice recipe. It was easy to cook and one of those layering type recipes that I love so much! Plus, it makes a lot and it tastes good and bonus….it holds up in the fridge and freezer well! I will throw this in the monthly rotation for sure!
